Open Inkfillers Studio on the tablet, switch on Kiosk Mode and set a staff PIN. That tablet is now your check-in station.

No. The kiosk is locked to check-in and signing only. Exiting kiosk mode requires a staff PIN, and repeated wrong attempts are rate-limited.
They are stored on the customer and the session, versioned against the exact terms text they approved, with a timestamp. You can retrieve them any time.
Yes. The kiosk uses the terms and consent documents you manage in Inkfillers — your text, your sections, your languages.
